Mix the first 5 ingredients together and put them into a baking dish. Rub the 5-spice all over your pork belly and lay it on top of the wet mix. Cover the pan tightly with tin foil and bake in a medium hot oven until the pork is tender and cooked through. Transfer to plate and slice it for recooking for the Bahn Mi.

To assemble Bahn Mi you need a good baguette cut into sandwich lengths. Spread a really good home-made mayonnaise or aioli on to the inside of your baguette and add some lettuce, some peels of carrot, some coriander and mint. Briefly fry the slices of pork belly in some hot oil. Add pork slices to the sandwich and add a squirt of nuoc cham dressing.
