Fennel seeds

Fennel has an "anise" flavour and, like coriander, is an amalgamating spice able to bring other spice flavours together.

Roasting fennel seeds changes the flavour from "anise" to a sweet, spicy flavour. Use them in tomato dishes, breads, pasta and with meats. They can also be added to pickles.
