Arabica Lentil Braise
A wonderfully aromatic and rich dish, which is also very versatile.

Method
Finely chop onions and garlic. Fry the onion in a little olive oil, add Arabica Rub and cook till fragrant, then add garlic.
When onions and garlic are soft add brown lentils, tomatoes, tomato paste and just enough water to cover.
Cook until lentils are soft (top up the water as it reduces) keeping lentils covered.
When cooked add fresh chopped spinach and let wilt.
This recipe can be used as a base for sausages, beef or put cubed tofu into the dish when you add the lentils to absorb the flavour. Fantastic with a poached egg on top.
