7-Layer Mexican Dip
A fun and colourful party dip to serve with corn chips.

Method
Fry the onion in a frypan with 1 tablespoon of oil until just softened. Add the Mexican spice mix and the refried beans and stir until well combined.
Make the guacamole. Mash an avocado with the lime juice and salt. Stir through the chopped chilli, the spring onion and the minced coriander.
Make the salsa. Finely dice the garlic clove and the red onion. Put them in a bowl and add the chopped tomato and lime juice. Give it a stir until combined. Mix in the cumin, salt and chopped coriander. Stir well.
Dice the large tomatoes.
Then Layer in this order. refried beans mx. sour cream. guacamole. salsa. lettuce. feta cheese. sliced olives. tomatoes.
