Roast Carrots with Dukkah & Pomegranate
Easy and exotic.
Ingredients
Method
Heat the oven to 180℃. Scrub the baby carrots.
Toss the carrots in the olive oil, pomegranate molasses, lemon juice and salt and pepper. Lay in an oven tray in one layer and roast until tender- approx. 20 minutes.
Serve on a platter and sprinkle generously with Dukkah and top with pomegranate arils.
