Minted Couscous Salad with Berbere
Couscous makes a nourishing and interesting salad, not just a base under meat and fish. This one is full of all sorts of goodies, so makes a meal in itself.
Ingredients
Method
Pour boiling water over couscous in a large bowl; cover and let stand 30 minutes until water is absorbed.
Add remaining ingredients and combine.
In a small bowl mix ingredients for dressing.
Pour over salad, mix and refrigerate for a few hours before serving.
