Cardamom - brown

Brown cardamom has a smoky taste which is great in marinades. It is very different to green cardamom and they should not be interchanged.

Brown cardamom is used by giving the pod a hard thump to open it and pulling out the sticky seeds inside. They are great in Indian dishes like chicken marsalas. Alternatively, use the seeds in marinades to add a smoky flavour for barbeques. You could even try just slightly crushing a pod and putting it whole into sour cream or yoghurt to flavour it.
