Zeytinyağlı Kabak (Turkish Slow-Cooked Courgettes)
In this recipe, the courgettes/zucchini are cooked until they are completely soft. They make a nice spread on slices of Turkish bread, or serve it with grilled fish, or warm or cold as a side dish.

Method
Heat the olive oil over medium heat in a heavy pot.
Add the onions and garlic, and sauté until onions are softened. Put in tomatoes, courgettes, coriander, salt, pepper, mint and ½ cup hot water. Cover and cook over low heat for about 30-40 minutes, until courgettes are soft.
Leave to cool to room temperature and then drizzle with olive oil and a sprinkle of chilli flakes.
