Waterfall Beef Salad
This classic Thai dish is called waterfall for the sounds the juices make as the beef lands on the grill. A great mix of textures and flavours.

Method
Grill the steaks for 2-3 minutes each side until medium rare. When cool, slice thinly.
Mix the lime juice, fish sauce, sugar, chilli, mint and spring onions. Toss in the beef and tip into a serving bowl.
Arrange the remaining vegetables and herbs in bowls, so everyone can help themselves to lettuce, etc, to wrap around the beef.
