Pasta Tapoa
This pasta dish is reminiscent of Pasta Arriabata, but with a good earthy flavour from the Berbere.
Ingredients
Method
Heat oil in a large frying pan or saucepan over medium heat. Sauté onion and garlic in oil for 5 minutes.
Stir in basil, Berbere, tomato paste, lemon juice, black pepper and tomatoes; bring to a boil. Reduce heat to medium, and simmer uncovered about 20 minutes. With a ladle skim foam from top to remove acidity or sour taste.
Stir in parsley and season to taste. Ladle over the hot cooked pasta of your choice.
