New Potatoes

Simple ideas on using new potatoes.

Always leave the skin on when you boil potatoes (new potatoes are never peeled). You can simply brush the dirt from potatoes before boiling.

Put the whole potato (very large potatoes may need to be cut into chunks) into lightly salted, cold water then bring to a boil and simmer for 15-20 minutes until tender. Drain immediately. If dressing with mayonnaise, wait until the potatoes are cooled down to a warm temperature so that the mayonnaise doesn't split with the heat.

Cool boiled potatoes (or use up leftovers), then make a simple potato salad by mixing up some mayonnaise and pesto.

Sauté potato pieces with chopped bacon, onion, mushrooms and plenty of chopped parsley.

Hot cream mixed with a generous amount of chopped chives makes another wonderful dressing for boiled potatoes.

Make a reduced, garlicky tomato and paprika sauce for sautéed cubes of potato. Yum.

A very tasty warm salad can be made with thin slices of chorizo sausage and small cubes of potato that have been fried together in a pan, and roasted, skinned and sliced red capsicum.

Make a Spanish omelette with sautéed onions and sliced potatoes, mixed with garlic, chorizo, green olives, and parsley. You can give the omelette a lovely golden colour by adding some lightly roasted, crushed saffron to the eggs when you whisk them together.
