Grate raw beetroot, wash and dry the spinach and crumble the feta.
Toast the nuts and seeds either in a dry frying pan – moving constantly or on a tray in the oven. Set aside and allow to cool.
On a large platter make a bed with the spinach, loosely cover the spinach with beetroot, crumble the feta over and top with the toasted seeds and nuts.
Drizzle with extra virgin olive oil and a squeeze of lemon, or with your favourite citrus dressing.
