Harira Soup with Berbere
This is actually more like a stew than a soup, as it is full of vegetables, pulses and pasta. Easy to make, filling and tasty. Make enough to freeze the leftovers for later.

Method
In a large pot combine meat, onions, celery, parsley, pepper, turmeric, Berbere, cinnamon and butter. Stir over medium heat for 10 minutes till browned. Add 6 cups of hot water and the lentils or chickpeas. Cover pot and let simmer for about 45 minutes.
Add tomatoes and coriander leaves into the pot and let simmer for another 15 minutes. Break vermicelli or pasta into one inch long pieces. Bring mixture to a boil, stir in the noodles and cook for about 2 minutes. Season to taste and serve with lemon wedges.
