Beetroot Chocolate Cake With Mascarpone Icing

A simple but decadent earthy cake.

Process the beetroot, salt, sugar, oil, milk and baking soda in a food processor.

Sift the dry ingredients together.

Add dry mix to the processor and process.

Pour mixture into greased tin and bake for 50 minutes at 150°C. Test the cake is done with a skewer and leave in the tin for 10 minutes. Remove from the tin to a cake rack to cool.

Whisk the mascarpone and cream with 1 tablespoon icing sugar until just combined. Spread over cake. Decorate however you like.
