Cardamom - green
Green cardamom is most commonly used in Middle-Eastern desserts and sweets, but it also complements curries and rice dishes.
Green cardamom is one of the pungent spices which means you only need a little. It has a warm and pleasantly refreshing taste. Its top note flavours mean that it can be used in pastries, desserts and fruit dishes (especially mango or grapefruit) as well as in savoury rice dishes and curries. Try a bruised pod of cardamom in your coffee plunger next time you want a coffee with a nice lift. It loses its volatile oils quickly when ground, so only freshly grind what you need to, or use a bruised pod.
