Recipes - Fettucine with Fresh Tomato Sauce
Combine all ingredients, except pasta and prosciutto, in a bowl and sit at room temperature for about half an hour for flavours to blend. Meanwhile, cook the pasta in salted water then toss through with a little extra olive oil to stop the pasta from sticking together. Toss pasta with the sauce and tear the prosciutto over the top. Sprinkle with extra basil leaves.
* To skin a tomato easily, place in a bowl of freshly boiled water for a couple of minutes, then drain and rinse under cold water. The skin should be easy to peel off with your fingers.
