Recipes - Warm Green Bean Salad
Blanch the string beans in boiling water for 2 minutes (see note in recipe above on cooking beans). Place the anchovies in a small food processor and add the mustard and pepper. Add the vinegar and mustard very slowly, drop by drop at first, while the machine is running.
Place the warm beans and cooked bacon on a platter and pour the dressing over the top. Serve with crunchy bread.
