Method

Combine currants and sugar in a non-reactive pan and crush fruit against sides. Bring to a boil, stirring once to ensure there is no undissolved sugar, then boil hard for 8 minutes. Skim and strain through a muslin-lined strainer, then quickly pour into hot, sterilised jars and seal.
