Recipes - Red Currant Dressing
This dressing is to go with the Smoked Salmon Salad with Red Currant Dressing recipe. See the recipe index for salad recipe. Makes about 2 1/2 cups.
In a blender or food processor, combine red currants, the shallot, the onion and the salt. Process to a rough paste, then add water to desired consistency, starting with 1 tablespoon (you may use up to 1/4 cup). Season to taste with honey, starting with 1 tablespoon. Store leftovers in a tightly sealed jar in the refrigerator for up to 3 days.
