4 medium beetroot - peeled and coarsely grated
1 Granny Smith apple - peeled and coarsely grated
1 red onion - finely sliced
50g butter
3 tbsp red wine vinegar
3 tbsp light muscovado sugar (or light brown sugar)
1 cinnamon stick
