Recipes - Broad Bean Smash
The other day we made the following yummy mixture to use up some broad beans. It went well on chunky toasted bread, but also on top of salad greens.
(quantities to your liking)
raw shelled broad beans
feta cheese
chopped Kalamata olives
olive oil
mint
lemon juice
salt and pepper
Place all ingredients in a bowl and mash roughly with a fork. Serve on toasted crusty bread, or with salad greens, or as a side dish.
