Recipes - Courgette and Pounamu Dukkah Pasta
A very quick and easy way to create a healthy delicious pasta meal.
400g fusilli (or other short pasta)
1 tablespoon olive oil
2 garlic cloves crushed
4 courgettes coarsely grated
60g Ground's Pounamu Dukkah
2 tablespoons flat-leaf parsley roughly chopped
2 tablespoons of grated parmesan plus extra to serve
Cook the pasta in a large saucepan of boiling salted water according to the packet instructions, or until al dente. Meanwhile, heat the oil in a frying pan over medium heat, add the garlic and cook stirring, for 30 seconds. Add the courgettes and cook, stirring occasionally, for 5 minutes or until the liquid has evaporated. Add the Pounamu Dukkah and stir to combine. Drain the cooked pasta and add to the pan with the parsley and parmesan cheese then toss to combine. Serve in bowls topped with extra parmesan cheese.
