About Ground Recipes - Spezie Spiced Arancini

Arancini means 'little orange' and these deep-fried rice croquettes are named after the oranges they resemble. They are usually filled with mozzarella so that when they are broken open the stringy, melted cheese is mixed with the rice, which contrasts with the crisp crumb. The addition of Spezie to this one makes them truly Sicilian.


30g (3 tablespoons) butter
450g (2 cups) Italian Arborio rice
1200mls light stock
a pinch of salt
75g (¾ cup) freshly grated parmesan
2 egg yolks
3 tablespoons Ground's Spezie
2 small balls (25g each) of fresh mozzarella or bocconcini cut into small pieces
2 eggs lightly beaten
75g (¾ cup) fine dry breadcrumbs
oil for deep frying

For the bechamel sauce:
200mls milk
1 bay leaf
1 blade of Mace
a few Peppercorns
2 tablespoons of butter
15g (2 ½ tablespoons) flour
