Recipes - Chermoula Vegetable Kebabs with Spicy Tomato Sauce
This recipe adds a real sparkle to a vegetarian option on the barbecue. Of course the hot tomato sauce can be used with other dishes as well.
For the kebabs:
6-8 cauliflower florets (blanched for 2 minutes)
3 red capsicums seeded and chopped into 3 inch cubes
3 eggplant chopped
3 small red onions skinned and quartered
4 small leeks cleaned and trimmed
12 - 18 wooden skewers (soaked in water for 1 hour before)
4 tablespoons of Ground's Chermoula (thinned with a little olive oil if necessary)
For the Spicy Tomato sauce:
2 tablespoons spoons olive oil
1 medium red onion chopped
1 clove garlic chopped
2 medium tomatoes skinned and chopped
1 (400g) can plum tomatoes
1 tablespoon Ground's Red Harissa
Assemble the vegetable kebabs onto the skewers.
To make the tomato sauce, add half of the olive oil to a pan, with the onion and garlic and the chopped fresh tomatoes. Let it simmer for a while. Then add the canned tomatoes by squeezing each tomato in your hands before adding to the pan. Add the Red Harissa and simmer the sauce for about 20 minutes.
While the sauce is cooking, baste the vegetable kebabs with the Chermoula then grill or barbecue. Be sure to turn them frequently. When cooked, serve immediately with the hot tomato sauce.
