Recipes - Membrillo Cup Cakes
Cup cakes with a difference.
125g unsalted butter
½ cup caster sugar
2 large eggs
1 teaspoon pure vanilla extract
the zest of 1 lemon
1 1/4 cups of sieved flour
1 teaspoon baking powder
2 tablespoons milk
1 block of Ground's Membrillo sliced into 12 squares (reserving 1 tablespoon for the icing)
For the icing:
1 tablespoon of Ground's Membrillo
1-2 tablespoons of lemon juice
½ cup of icing sugar
Preheat oven to 180C. Cream butter and sugar. Beat in eggs, vanilla and zest. Fold in flour, baking powder and milk. Divide half the mixture among 12 paper cases placed in patty tins. Top with a square of quince paste and cover with more cake mixture. Bake for 12-15 minutes. Cool then ice with melted Membrillo mixed with lemon juice and beaten into icing sugar.
