Recipes - Preserved Lemon Dressing
This yummy dressing is great with grilled meats. It can be kept in the fridge for about 3 to 4 weeks (if it lasts that long).
1/4 cup lemon juice
¾ cup olive oil
½ cup mixed chopped herbs including basil and flat-leafed parsley
4 spring onions sliced
½ cup (80g) kalamata olives pitted and sliced
rinsed and finely chopped rind from ½ a Ground Moroccan Preserved Lemons
salt and freshly ground black pepper
Combine ingredients and season to taste. Stand for 2 hours for flavours to develop. Serve with kebabs or other grilled meat.
