Any small salad leaves are good here; rocket, baby red chard or watercress all make nice variations.
6-8 small beetroots
2tbsp olive oil
50g baby spinach leaves
1tbsp fresh chives - chopped
1tbsp balsamic vinegar
2tbsp extra virgin
olive oil
100g feta - crumbled
